Raisin Pecan Bread

Let me tell you about this raisin pecan loaf that I baked from my book, New Artisan Bread in Five Minutes a Day (Breadin5). I made our big batch of the Master Recipe using Platinum Yeast from Red Star Yeast, then pulled off a piece of dough, rolled in some raisins and pecans using a French Rolling Pin from JK Adams, let it rest and scored the top with a super sharp Bread Knife from Shun Cutlery just before I baked it in an Emile Henry Cloche. Two days later I took out another piece of dough and rolled in olives and sharp VT cheddar. Five days later I grabbed yet another bit of dough, put it in a proofing basket and baked it as a pure and simple boule. If you have a bucket of dough on hand, you’ll have the base for all of these fantastic loaves.

Find the full recipe below. Want to know more about the equipment I use? My Amazon shop has it all.

Using a rolling pin, roll the dough to a 1/2″ thick rectangle. Spread the raisins and pecans over the dough, roll it into a log, fold the log into a ball, then knead the dough a bit to distribute the raisins and pecans throughout the dough. Place the ball of dough on a piece of parchment, cover with a large bowl or plastic and let rise for about 90 minutes.

Preheat the oven to 500°F with the cloche in the oven. More on baking in a Cloche here. Sprinkle a bit of flour on the dough, score the bread with the knife and place in the preheated cloche.

Bake for 20 minutes, remove the cover of the cloche, turn down the oven to 450°F and continue baking for another 15 minutes or until deeply browned. Allow to cool completely before serving.

Slice and add butter!

Raisin Pecan Bread

For this recipe I started with the Master Recipe from my Artisan Bread in Five Minutes a Day books, then pulled off a piece of dough, rolled in some raisins and pecans, let it rest and scored the top with a super sharp bread knife just before I baked it in a cloche. I love how easy it is to make each loaf your own with whatever mix-ins you're craving!

I have town to love baking bread, I started about 9 months ago and I’m hooked, only bread we eat in our house now is home baked, it’s soo delicious, my favorites are Dakota bread and a no knead bread for soup and our absolute favorite is shokupan or milk bread, but I really am inspired by your raisin pecan bread, I think my husband will love it so I have to try, but I don’t have all these tools, so it would be so great to win them. Thank you for all your recipes, whatever you make always looks amazing.

  94. Homemade baked bread for the win!! I grew up with fresh bread everyday and this reminds me of the times we’d come home from school to a plate of warm, soft bread paired with hot spiced tea. Yummm!!

  95. Zoe ~ you’re always inspiring and ever the cheerleader, giving us home bakers the ‘can do’ attitude to achieve great results. Always!

  96. I would love to win the book. I’ve historically been terrible with breadmaking and have made it my mission to correct that. Thank you for the opportunity.

  97. Would so love to win this so that maybe i could successfully (finally) make good bread! Happy Birthday and Thanksgiving.

  103. I love ALL your posts that inspire me to try new recipes‍ and these bread variations are so tempting me. Help me win the tools to get up earlier and bake!

  104. Would love to win for my husband. Went to school for baking, worked in field for short time. Changed careers. Now slowly getting back into making bread for our young family. Happy Birthday!

  105. I surely would be tempted to add cinnamon to this amazing bread. I love that the dough can hold. I can’t eat a loaf in one day and because of that I don’t bake as often as I like. It’s such a process for just one loaf but having more than one at a time they go stale and I just don’t like it as much when it’s been frozen. I’ll be trying this dough out for sure!

  106. I did not mean to comment twice. The first comment, when I clicked to post it, a window popped up telling me that I had already commented that, when I know I had not, so I tried again.

Same for this one, almost enough to make me a raisins in bread convert. 🙂 Anyway, thanks for recipe share and lovely pics as always!

  152. That bread looks delicious! I don’t believe I’ve heard of a cloche but it looks like a neat thing to bake with! Hope I win, I’d love to have your book!

  153. I love your bread baking technique! I have tried your bread in 5-my family has never had such delicious bread! Thanks for teaching me some of your amazing baking skills!

  154. Love reading about your method and would love to have an Emile Henry Cloche. I recently used an EH covered bread baker using a recipe suggested for it The recipe did not tell me to remove the top before baking and the crust stuck to the top of the pan. I ended up with decapitated bread. I guess I made guillotined French bread.

  155. Everything you make is so beautiful and looks so good. Thank you for sharing this wonderful package and for always inspiring.

  156. I got your holiday breads book and making my first recipe from it tonight! Really excited about this giveaway!

  157. I so love the idea of a big bucket of dough that you can dip into for a different loaf every day. Every day is a good day for fresh baked bread.

  158. I love your holiday baking cookbook and make the brioche dough so often! And I LOVE Emile Henry crockery. Can’t wait!

  159. Love your website and your books! I’ve been using the master original recipe since the first book came out, and your/my bread always gets rave reviews. It’s a staple at our house. Thank you.
