There are certain things that happen in a professional kitchen that strike me as magic. They seem unmanageably gorgeous and too difficult to attempt at home, but usually with a bit of guidance anyone can do it. These hazelnut candies are on the list. They look like delicate jewels, standing impossibly tall and thin. They are the perfect accessory to a sleek chocolate covered praline cheesecake and not at all difficult to make.

This cake is about as smooth and rich as is possible. To flavor the cheesecake I used a product by love n’ bake, which is just ground praline made into a paste. You can replace it with nutella (for even more chocolate) or even peanut butter (go smooth for this). The trick to the texture is baking in a water bath at a low temperature to prevent the cake from baking too fast.

I’m a sucker for a chocolate cake and so it seemed the perfect place for me to dive into Robin’s newest book. This one caught my eye for another reason as well — it is vegan. No, I’m not a vegan, but I’ve been looking for this very recipe since the day my brother and his girlfriend announced to the family that they were. I’d been experimenting with vegan cakes to serve them, but honestly I hadn’t gotten very far. I’m too wedded to butter, eggs and cream. Robin came to the rescue. I gave the recipe a test run for Katherine’s (the aforementioned girlfriend of my brother) Birthday. Truth be told I never actually gave them to Katherine, not for lack of desire, but because they are in Copenhagen at the Climate Change March, where they are preparing to display their artwork to affect change in the world. What a memorable birthday she will have and I will gladly make these cupcakes again once she returns. A perfect way to celebrate.

Robin manages to achieve a rich chocolate cake with a moist (but not dense) crumb without the benefit of eggs or dairy. Mystifying! The filling is remarkably reminiscent of mocha pastry cream and the ganache is chocolaty and glossy. It all defies classic baking and yet it works wonderfully.

My Aunt’s Birthday Cake flies to Florida!

Many of you may have read about my aunt Kristin in past posts. She is a true lover of food and cookbooks. In fact, she supplies me with a great number of the books that fill my shelves. That is saying a lot considering I own hundreds of them.

In addition to the books, she sends me articles and pictures of food, mostly pastry. She has been a constant source of inspiration. Her birthday is coming up and because she lives in FL I can’t be at the party. In my stead I sent a cake to the party. My father, who lives just blocks from me, carried the cake on his lap during his flight to see her. When I handed over the cake, all nestled safely in a cake box, my dad said “can’t you pack it with pop corn or bubble wrap?” I took a deep breath and said “No, dad you can’t pack a cake with bubble wrap!” LOL!

“Red Hot” Boston Cream Pie

This week was my husband’s birthday and he requested a true American classic for his cake, Boston cream pie. Light pillowy sponge cake with layers of rich vanilla pastry cream and topped with a smooth chocolate glaze. Why do we call this cake a pie? It was invented in the 1850s by a French pastry chef working in Boston. My theory is that he got lost in translation and mistakenly called it a pie! (But I’m making that last bit up.) Whether the name fits or not hardly matters, it is delicious. In fact, my family loved it so much the four of us ate the entire 8-inch cake in one sitting. I was thrilled except I never got a picture of it for this post.

The next day a package arrived in the mail from the White On Rice Couple, Diane and Todd. It was a perfect stick of Vietnamese cinnamon bark. I had won it during a giveaway they had on their fabulous website. It is not an exaggeration to say that this gift has changed my life. Read More
