At the core this is a pound cake that has a perfectly dense crumb and is rich with almond paste, but it is also a tribute to spring, which is on its way. The decoration came to me after I made the blood orange glaze, that is the prettiest pink you can find in nature. The color is from the red fruit, without use of any food color (the season is short, so you can recreate this color with all natural food color that I link to below). The pink got me to thinking about Easter, Mother’s Day, Bridal Showers, Wedding Cakes and the Couture Dresses at the Oscars, which are tonight. That’s a lot of inspiration for one little bundt cake, but this cake can handle the pressure. The almond cake under all the fancy is good enough to serve with nothing more than the glaze or a simple dusting of confectioners’ sugar, so don’t skip this one even if you aren’t up for piping roses, which I show you how to do in my instagram video of this cake. This Awesome Apple Almond Crisp is the easy, last minute, under appreciated cousin to the Apple Pie. It is every bit as delicious and I think beautiful in a rustic way, albeit not as refined looking. It can be in the oven in less than 30 minutes and emerges bubbling, crisp (hence the name) and the perfect landing place for a scoop of ice cream. My topping typically has rolled oats, but this time I wanted the toasted almonds to be the clear star, so I used oat flour instead of the old fashioned oats and all-purpose flour, making this crisp entirely gluten-free (and vegan). I used a mix of apples, as I always do, to give the fruit layer more depth of texture and flavor. I also sliced them thin, because I was using a shallow pan and I wanted the apples to create a dense layer that stood up to the topping. For me the ratio should be just barely more fruit than crisp topping, so you’ll see I go thick.

Pear Almond Tart

I think tarts are an under appreciated art form. The sweet, tender crust is the perfect frame for just about any filling. This one has poached pears laying in a bed of almond cream and surrounded by toasted almonds. The flavor combination is classically French and looks sophisticated enough to be served at any special occasion. But, it’s really quite simple to create and there’s no reason not to have it on a Tuesday or for breakfast or as an after school snack.  (more…)

Raspberry, White Chocolate and Blueberry Tart!

The patriotic colors and summery flavors combine to make this white chocolate berry tart the perfect 4th of July dessert.  Red raspberries, white chocolate pastry cream and blueberries top an almond shortbread crust. Add a dusting of confectioners’ sugar and you have an easy, yet elegant pastry. Given the holiday I made the tart in a rectangular pan to mimic the shape of the flag, but it also works well in a more traditional round pan or even as individual tartlettes. Later in the summer try this same dessert, but switch the berries for fresh peaches or plums.

Flourless chocolate torte is a long-standing tradition on Passover. I have made several variations, but this one is far and away the most popular. It is made of several layers of a flourless chocolate-almond cake and bittersweet ganache. I make the whole thing without dairy, for those who keep to kosher laws, and you’ll never know the difference. It is one of the few times I use margarine and cream substitute and I promise it is absolutely divine.

The cake can be prepared in advance, wrapped well and refrigerator for a few days or frozen for a couple of weeks. This leaves you with less work to be done on Passover. Just decorate with some fresh berries and enjoy a slice of rich, chocolaty goodness after your dinner. (more…)

Pumpkin is an ingredient I get obsessed with this time of year. Its bright orange shell is such a relief during a season when color is fading away and the grey of winter is settling in. In fact, I am determined to paint a room the color of roasted pumpkin this year. But, my love of pumpkin goes beyond its mood lifting color, I adore its luscious texture, its ability to marry with both sweets and savory, and its earthy sweetness. I’ve heard there are folks that don’t share my enthusiasm for this gorgeously colored gourd, but I’ll eat roasted pumpkin with a pat of butter and a sprinkle of salt. It is even more wonderful in desserts; pumpkin creme brulee, classic pie, breads and cheesecake. When it is pureed smooth, it has a custard like texture, so it lends itself beautifully to this silky pumpkin cheesecake. For a contrast to the velvety cheesecake, I’ve added candied almond crunch and a dollop of Amaretto whipped cream. (more…)
