Birthday Cake

Tomorrow is my son’s birthday and this is the cake he requested. My kids have always been opinionated about their birthday cakes, because I encouraged it. I like the challenge of creating something special for them. Chocolate cake with cream cheese frosting is a simple enough cake, but he’s turning 17, so it needed to stand tall, just like him.

I LOVE my devil’s food cake and it will always be my go to, but in the name of research, I am always trying new recipes. I tried this one from Stella Parks, BRAVETART cookbook. She and I seem to have a similar philosophy about sweet. We want it to be there, because it’s a cake, but it shouldn’t hurt your teeth or be the dominant flavor. We also have a fondness for testing recipes and her’s always work, which is something you’d think was a given in cookbooks, but sadly isn’t always the case. So far everything I’ve tried in this book have been spot on and delicious.

Her Devil’s Food cake is made in a saucepan. I was skeptical, but she nailed it. It’s dark, bitter (in a GREAT way) and moist. The milk chocolate whipped ganache is creamy and sweet, which pairs perfectly with the cake, just as she claims it will. Her cream cheese icing is made with pastry cream and has a rich, tangy taste and holds it’s shape WAY better than cream cheese icing made with powdered sugar. (more…)

Plate-Lickingly Good Chocolate Cake! (Henri’s TWO Birthday Cakes)

Henri Turned 10 this month and the celebrating has been at a feverish pitch for weeks. It is a big year when your little baby hits double digits and becomes a Tweenager. On his actual birthday we celebrated with our family. He wanted to rent the movie Grease (one of his babysitters was recently in the play at the high school), have sushi and eat chocolate cake! It sounded like a fantastic idea to me. After 20+ years I’d forgotten about some of the racy content in the movie, which they edited out of the high school play, Oooops! Luckily we were watching at home and could fast forward through the more “educational” scenes!

The cake he chose was amazing. I used my Devil’s Food Cake recipe and topped it with Dorie Greenspan’s Chocolate Malted Buttercream. A bunch of chocolate shavings made it look festive, but it was so simple to put together. (more…)

My Aunt’s Birthday Cake flies to Florida!

Many of you may have read about my aunt Kristin in past posts. She is a true lover of food and cook books. In fact, she supplies me with a great number of the books that fill my shelves. That is saying a lot considering I own hundreds of them. In addition to the books she sends me articles and pictures of food, mostly pastry. She has been a constant source of inspiration. Her birthday is coming up and because she lives in FL I can’t be at the party. In my stead I sent a cake to the party. My father, who lives just blocks from me, carried the cake on his lap during his flight to see her. When I handed over the cake, all nestled safely in a cake box, my dad said “can’t you pack it with pop corn or bubble wrap?” I took a deep breath and said “No, dad you can’t pack a cake with bubble wrap!” LOL!
