Earlier this month I went on a mom only junket with my friend Jen. We went to Vegas! Our trip there was for the food and not all of the other more “sinful” elements it is known for. We stayed at the ultra *fabulous* Wynn hotel, which has some of the best restaurants in town. Just like the knock-our-socks-off meal we had at Joel Robuchon the restaurant scene there is very luxurious and expensive. When many of my chef friends recommended a casual Thai restaurant off of the strip, I was eager to try it.
Seriously folks Lotus of Siam is the best Thai food, and perhaps the best FOOD, I’ve ever eaten. It is very casual and lacking in pretension, which is such a breath of fresh air in Vegas. It has been favorably reviewed by countless food magazines and critics. The reviewer from Chow said “Don’t skip dessert, or you’ll regret it deeply!” Well folks, I have to admit I gorged myself to the point of not being able to eat dessert the night we went. It is a decision that I will regret until I am able to go back! Me of all people skipping dessert, it is shameful! The restaurant is famous for their Sticky Rice with Mango and Coconut cream. Glitz and Glam Chocolate Tart with Chai Caramel on Oscar Night!

For the Oscars and I thought it would be fun to do a dessert with some Bling! Nothing like adding gold leaf to a decadent chocolate caramel tart to make it worthy of a black tie affair. I was cozied up in my pajamas with a room full of my girlfriends, but despite our lack of proper attire we sipped champagne and ate gold leaf.
I had lofty aspirations of seeing all of the nominated films, but alas life got in the way and I only saw a couple of them. The film getting all the buzz this year is Slumdog Millionaire, and it is one that I saw. I must say I loved it! The movie, set in India, was complicated, gritty, suspenseful, endearing and touching. All of the qualities that a great movie should have. This movie, along with the newest addition to my cookbook collection La Maison du Chocolat*, was the inspiration for this tart. I started with the classic combination of chocolate and caramel, but I added the spices of India to the mix.

Baklava - A sophisticated twist on the classic!

Thanks to Peter @kalofagas.ca (I follow his culinary journey on Twitter), I’ve been craving Greek food, baklava in particular. For some crazy reason I haven’t made it since I was in college, about 20 years ago. I love the crisp phyllo which is layered with ground nuts, sweet spices, bathed in butter and honey with just a touch of rose water. It is this last ingredient that gives the recipe its magic. The rose water should be so quiet as to be undetectable, but make people wonder why this baklava is so much better than any other!
Too much and you cross the line into a Crabtree & Evelyn fragrance, so take it easy!
I decided to make the baklava as individual desserts instead of the traditional diamond shape pieces. I thought it would be more elegant to serve. It may take a few more minutes to assemble this way, but the presentation is worth the effort! Read more

This cake was designed by my 9 year old son. He even instructed me on how I should put it together. His plan was to bake a sheet of cake and cut the layers with a heart shaped cookie cutter. Then stack them together with raspberry cream and pour a glossy chocolate ganache over the top. I know I’m biased, but I think he is brilliant!

Recently I participated in a benefit auction for one of my favorite charities, the Children’s Heartlink. We auctioned off a “celebrity” chef bake-off to be held at General Mills test kitchen. Assembled were a team of my favorite pastry chefs in the Twin Cities as the coaches and some heavy hitting celebrity judges. Dr. Jim Rice bought the event and invited 20 of his friends to join him for a great evening. The pastry chef coaches came up with recipes, were allowed to talk the team through the process, but weren’t allowed to touch anything. My team was a blast, they had a great time and produced a gorgeous dessert, which got them second prize!
My friend and exquisite pastry chef, Michelle Gayer’s dessert won the gold! She is the chef/owner of the Salty Tart in Minneapolis (co-author of Charlie Trotter’s Desserts) and her dessert kicked A–! It was a pineapple polenta upside-down cake with caramelized macadamia nuts. I meant to ask her for the recipe, but she was off to Disney World with her family. Well, great minds think alike and it turns out that Johnny Iuzzini has a dessert that is just like it in his new book Dessert FourPlay. While I wait to get Michelle’s recipe I decided to give Johnny’s a go. Two world class pastry chefs’ version of a classic!
