30 years ago my dear friend, Sally, gave me a copy of Lee Bailey’s Country Desserts. At the moment neither of us realized how significant that gift would be in my life. It was way before Instagram and the endless blogs filled with impossibly gorgeous recipes. Who am I kidding, it was before the internet. I had that one cookbook and a shitty student apartment kitchen to bake in. I made almost every recipe in the book and as a result learned how to make everything from cookies, cakes, pudding and even candy, but these outrageous brownies were the best thing in the whole book. I would splurge on really good chocolate, which meant something beyond Hershey’s. God only knows what brand it was back then, but I remember spending my entire food budget on chocolate, nuts and butter just to make them. I must have survived on rice cakes and peanut butter for the rest of the week.

For those who have been visiting me for a while on ZoeBakes, you may remember my first Ice Cream Cake post; a dedication to my two brothers. Well, almost 4 years later and I’m still making them ice cream cakes for their birthdays, some traditions are just worth repeating. This cake was done in exactly the same way, but the ice cream flavors are different and I added a layer of sorbet. Chocolate Brownies with Mint Ice Cream
These brownies have secrets! I baked them, passed them out to my family, my neighbors and my friends to see what they thought. I didn’t say anything, just asked for their honest opinions and this is what I got… “they are so RICH,” “beyond decadent,” “Amazing,” “Great, can I have another one?” (he is 9) and on and on. Not a bad review in the bunch. No one guessed that they were gluten free and from a King Arthur Flour mix.

When I was an art student at the University of Vermont I worked at the Ben & Jerry’s making ice cream cakes. It was my first job in the world of sweets and I have never looked back. My brothers were very little then and it started a birthday tradition for them that lives on today. I wish my two brothers lived close by. They are wildly talented and two of my favorite people to be with. Every summer my family rents a cabin in Northern WI and we get to spend precious, albeit short, time together. This year that time fell on Carey’s birthday. Even at the ripe old age of 27 he still wants his childhood favorite; ice cream cake.
As some of you may know this month has been a marathon for me. Jeff and I finished the manuscript for Healthy Bread in Five Minutes a Day just last week. Did you hear me celebrating?! The week prior I was on vacation with my family in Maine. It was a glorious week of ocean, lobster, fresh wild blueberries and some of the best pie on earth. And last but not least, yesterday was my 18th wedding anniversary. Despite my absence from blogging I have been baking and look forward to being back home where I can start posting about my adventures in the kitchen.
