The Best Apple Pie (now with videos)

One of the glorious issues of a 20-year marriage is the honesty, brutal, albeit “loving,” honesty. Here’s the thing, Graham has never been head-over-heels-in-love with my pies. He always loves bits and pieces of them, but never the entire pie. Can you imagine what that does to a girl who prides herself on figuring out all things sugary. Believe me when I say that I have been on a 20-year mission to create THE perfect pie. Not just a great crust, or filling, but the entire package. Well, I can breathe a sigh of relief, and have a moment of marital bliss … because, he declared this apple pie “the best pie I have EVER eaten.” You can not know how important this day has been for me, as a professional pastry chef, as a wife and as a perfectionist. Challenge met.

The keys to my winning apple pie were the apples, I used 6 different varieties, because it is apple season in MN and there are so many gorgeous apples to choose from. They all have different flavors, textures and colors. I like to mix them to create a more interesting pie, although I think you can get a very good result with just two kinds. Then there is the crust, which was made with 100% LARD. Yep, unless you are vegetarian, you really need to try it. I am madly in love with lard. It requires a slightly gentle touch, but follow my directions and it will be tender, flaky and delicious!

Almond Chiffon Cake

There are several perks to writing a food blog, the best being the excuse to have delicious cakes, like this almond chiffon cake, in the house at all times. The only person who has an issue with this is my personal trainer, but I just remind him what job security it is for him. I also have an extensive (300+) cookbook library that I attribute to “research” when my husband asks where we will put them all, now that my book shelves are over flowing. Then there are the products companies send me to critique and review. I have received everything from peanut flour (which I adore) to a confectionery funnel (which is for portion control of pancakes and other runny stuff. Really, you have to make your pancakes the exact same size???). I will never review or endorse a product I don’t actually love and find value in.

Now back to the baking…this cake was inspired by my trip to Italy this past summer. The man who owned the home we rented introduced me to his favorite cookie, the ricciarelli. They are made from almond paste and egg whites baked into little rich clouds and dusted with pure white confectioners’ sugar. I was completely addicted to them after the first bite. They are available all over Tuscany and when baked fresh you want to sing their praises. The stale ones you buy in the tin are to be avoided and unfortunately that is what most of us have tried. After writing this description I realize I need to create and post a recipe for the actual cookie, but for now I have a cake that it inspired. It is light and spongy, but at the same time decadent because of the almond paste. The cake is great on its own with a cup of coffee for breakfast or with ice cream or coulis for dessert.

Springtime Flower Cake for Kathy (Le Creuset Giveaway)

This weekend was my neighbor’s birthday. Her husband asked me to bake her a decadent chocolate cake and decorate it with “Spring Flowers.” Here in MN it isn’t exactly bursting with flora yet. In fact, as I was working on this flower cake it started to snow. But Easter is right around the corner and the tulips and rhubarb are promising to come out of the ground soon. We hold our breath and hope for a greener time, soon. Her cake, like Kathy herself, had to be over the top and fantastic! I wanted it to be bright and full of life to compensate for the snow!

The chocolate layers were made up of Devil’s Food, Chocolate Pastry Cream, Bittersweet Ganache, White Chocolate Buttercream and the flowers were made from gum paste.

Coconut Macaroons (Haystack Cookies)

There are a few desserts that are ubiquitous for Passover. Coconut macaroons, “fruit slices” and caramel covered matzo are my favorites. All of them can be found wrapped tight in the “kosher” section of the grocery stores, usually sealed to sit there for months, if not years. When you peel the plastic off you are left with overly sweet, dense and utterly flavorless versions of these wonderful treats. So I make my own! None of them are particularly complicated and after making them yourself you will be forever ruined to the Manischewitz versions.
