Crazy About Fresh Warm Doughnuts!

I made a batch of chocolate filled beignets for a dinner party. The next morning the oil was still on the stove, albeit cold and I had brioche dough left in the bucket. My boys were waiting for something to eat and the coffee machine was doing its magic. In as much time as it would have taken me to make oatmeal I whipped together a batch of warm fresh doughnuts. The boys were thrilled and my coffee had the perfect companion!

Roll the brioche dough out to 1/4 inch thick. Using a biscuit cutter and a small round cookie cutter shape the doughnuts. Make sure to save the holes to fry up.

Fry them in the oil as you would the beignets (page 197) of Artisan Bread in Five Minutes a Day.

Lay the doughnuts out on paper towel to drain off any excess oil.

Dust with powdered sugar, pour that cup of coffee and read the paper. My perfect morning!

Nice way to use up that brioche dough :) I was planning on baking up some brioche dough and there will probably be some leftovers. I know what I am going to make now! Expcet I will probably make doughnut holes. Little bite size fried dough…

Hi Amanda,

The holes were gobbled up before I could get them in the picture!

Thanks, Zoë

I love your blog (and your book) Zoe. This one is such a great idea. I haven’t tried the brioche yet, but I’ve been wanting to. My little ones would just die if I presented them with a hot doughnut in the morning. They LOVE doughnuts but I never make them because I don’t want that many around the house. Now I realize I could just make a few and not feel bad.

Hi all,

They would be great with a powdered sugar and lemon glaze or just a drizzle of Lyles Golden Syrup!

There is nothing like homemade, warm donuts!!! I mean, wow…If you’ve never made them @ home, you don’t know what you’re missing…They’re NOTHING like what you get in the donut shops…
