Okay, if you are going to be using the good bacon then you need to match it up with a nice chocolate that isn&#039;t too waxy. I&#039;d try Scharffen Berger, valrhona, Callebaut, El Rey or any of the chocolates in your local grocer that contain cocoa butter and not a bunch of emulsifiers that are too hard to pronounce, let alone eat! 

Yes, I think at room temperature the entire experience would have been much enhanced!

Son Chris was in from Tucson to attend the Fair with me on Opening Day.  He had to try Dave&#039;s Pig Lickers (Oy!  The name!) and shared them with me. I have some really good bacon from my farmers market pigmeat guy and Chris is coming home again this week for a class reunion.  Maybe I&#039;ll offer him some homemade.  

What&#039;s your recommendation for chocolate (that I won&#039;t have to travel too far to acquire)?
