The last three times I’ve made this, the batter hasn’t risen or popped up AT ALL. It’s just a flat pancake… it DOES cook thoroughly, but it’s dense and flat. No rising at all. I have changed eggs (making sure they are fresh), I have used good, fresh milk. I have used different flour. Can too much cinnamon be an issue? My kids like it with a lot of cinnamon and it’s never been an issue in the past. I am using the same cast iron skillet.

I have tried whisking the ingredients in a different order to see if that is the issue. Nothing I do seems to work. I am just beyond puzzled. I made a hundred times prior and never had an issue.

Just had a thought… maybe I need to get an oven thermometer… could that be the issue? So bizarre…

I wrote the above comments three months ago. I just had to take a moment to come back and let you know that this is still one of our favorite recipes! We make these once or twice a week and my kids just LOVE them. They are WAY easier than traditional pancakes (the flapjack variety) and taste a whole lot better. I like the butter on the bottom goes to the top idea.
